The Director of Food and Beverage oversees all aspects of the organization’s Food and Beverage platform to the highest standards to ensure an exceptional guest experience. Must be progressive and forward thinking. Creativity is an essential and critical component to the position.
ESSENTIAL FUNCTIONS (including but not limited to): Direct, develop and implement all aspects of Food and Beverage operations ? Develop a pro forma and organizational chart to operate a fiscally responsible department ? Develop menu planning, costs, and preparation of all Food and Beverage presentations with the Executive Chef to include Concessions, Suites, Restaurant and Special Events ? Ensure compliance with operating standards to maintain brand integrity ? Develop and implement operational procedures and standards that support employees and their effort to deliver outstanding service ? Set objectives within the Food and Beverage Department to supervise the individual department managers ? Oversee training in all departments of Food and Beverage to ensure total guest satisfaction ? Ensure all labor and Food and Beverage costs are in line with budget ? Responsible for RFPs to vendors for best cost and quality control ? Align with Human Resources to recruit and select qualified candidates ? Align with Human Resources to provide all Food and Beverage employees with the orientation and training needed to understand expectations and perform job responsibilities ? Set and maintain proper staffing levels adjusted to business volume ? Develop the annual budget with the Director of Finance? P&L accountability and responsibility for bottom line results ? Oversee operating costs and can develop an operational business model to maximize fluidity ? Develop annual financial goals and objectives ? Analyze business results and trends on a regular basis and take actions to improve results as needed ? Work closely with the Director of Operations to plan coordinate and oversee all Special Events Oversee Concessions, Bars, Clubs, Plaza and Special Events operations ? Oversee schedule and staffing needs for all Food and Beverage areas including full time, part-time and event day ? Oversee and lead the management staff within department ? Approve all Food and Beverage purchases ? Maintain a secure and theft free warehouse ? Ensure all health code, TABC and safety standards are maintained ? Oversee the maintenance/warranty and operation of all equipment ? Report and document all hazards, injuries or unsafe practices within the work environment ? Conduct monthly inventories of Food and Beverage products to ensure an accurate month end ? Coordinate all vendor and Sponsorship negotiations within the department to insure quality goals are aligned within the organization ? Implement regular tastings to assist in the highest quality menu selections (i.e. wine/spirit selections and developing new food concepts) ? Generate seasonal price and menu comparisons for other sports and entertainment venues in the Metroplex ? Oversee all menu selections and pricing ? Attend food shows for new food, beverage and equipment trends ? Approve all pre and post reports for each event? Approve weekly payroll for food and beverage department? Approve all month end, invoice and year end reports? Conduct training for staff, including full time, part time and event day Create a positive work environment for staff at all times
NON-ESSENTIAL FUNCTIONS: Perform other duties as assigned.
QUALIFICATIONS: Bachelor’s Degree from an accredited college or university with major coursework in Hospitality, Business Administration or other related field Minimum of five (5) years of increasingly responsible experience in food and beverage, preferably with a sports facility, convention center, performing arts facility or other multi-purpose public assembly facility Highly energetic and motivated individual ? Must have strong leadership skills ? Previous hospitality industry experience preferred ? Excellent interpersonal and communication skills with a strong customer/ client focus essential ? Self-starter with ability to work independently and as a team ? Ability to work in a fast pace, high pressure environment ? Ability to shift and manage multiple priorities ? Results driven focus ? Adaptable to change ? Must be available to work a flexible schedule including long hours, nights, weekends and holidays Ability to work independently and as part of a team Must be detail oriented, have strong organizational skills, and demonstrated interpersonal skills Exemplary customer service skills with the ability to handle multiple tasks and priorities simultaneously High level of flexibility regarding overtime during busy periods as required by the business
